Stopper la cuisson en les plongeant dans l\u2019eau froide.<\/li><li>Pendant ce temps pr\u00e9parer une mayonnaise, en m\u00e9langeant la moutarde et le jaune d\u2019\u0153uf et verser l\u2019huile lentement en un filet continu tout en continuant fouetter sans arr\u00eater avec un fouet (main ou \u00e9lectrique) ou une fourchette. Ajouter un filet de citron ou un peu de vinaigre une fois la mayonnaise mont\u00e9e, sel et poivre.<\/li><li>Une fois les \u0153ufs refroidis, les \u00e9caler, couper en deux dans le sens de la longueur afin de garder les moiti\u00e9s de blanc qui seront remplis du m\u00e9lange \u0153uf-mayo.<\/li><li>R\u00e9cup\u00e9rer d\u00e9licatement les jaunes, et les \u00e9craser avec une fourchette. R\u00e9server la moiti\u00e9 qui servira pour la d\u00e9coration et m\u00e9langer l\u2019autre moiti\u00e9 avec la mayonnaise. Remplir les moiti\u00e9s de blanc \u00e9vid\u00e9s avec ce m\u00e9lange et saupoudrer avec le reste de jaune d\u2019\u0153uf \u00e9cras\u00e9.<\/li><li>Pr\u00e9senter sur des feuilles de salade et d\u00e9corer selon votre inspiration d\u2019une demi-olive, d\u2019une t\u00eate d\u2019asperge, de ciboulette, de persil\u2026 Le m\u00e9lange jaune d\u2019\u0153uf-mayo peut-\u00eatre agr\u00e9ment\u00e9 de crevettes, chair de crabe etc pour confectionner une entr\u00e9e festive.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Vous trouverez ici les photos des \u0153ufs mimosa produits lors d\u2019un Zoom-recette.
